Tuna Tartare

INGREDIENTS
1 tsp fish sauce
Juice of 2 limes
1 tbsp sugar
1 tbsp soy sauce
1 tbsp Pukara olive oil
2 purple shallots, finely diced
1 chilli, finely diced
1 garlic clove, finely diced
1 tbsp coriander
Pinch of Tasman sea salt
50g fresh tuna loin
METHOD
Step 1
In a small bowl combine fish sauce, lime juice, sugar, soy sauce, olive oil, shallots, chilli, garlic, coriander and a pinch of salt.
Step 2
Cut tuna into 1.5cm x 1.5cm cubes. Add to the bowl with the dressing and stir until tuna is coated.
Serve with a pinch of sea salt.
