Sugar Minted Pineapple

INGREDIENTS
1 small pineapple, skin removed and thinly sliced
1 bunch of mint leaves
½ cup sugar
METHOD
Step 1
Using a stick blender, blitz together the mint leaves and sugar until it forms a fine sugar mixture.
To serve, place a layer of pineapple slices onto a plate and top with minted sugar. Repeat this process until all components have been used.
