Vegan Pineapple Curry

COOK TIME 25 minutes
SERVES 3-4
INGREDIENTS
6 cloves garlic, crushed
1 red onion, diced
1 tsp vegetable oil
2 sticks cinnamon
2 pineapples, skin removed, cut into bite size pieces
2 green chillies, sliced
1 ½ tsp curry powder
20 curry leaves
2 tsp dried chilli flakes
1 tsp turmeric
½ cup coconut milk
½ cup coconut cream
Tasman sea salt
METHOD
Step 1
Add onion, garlic, cinnamon sticks and vegetable oil into a pot and lightly cook until onion reaches a soft consistency.
Step 2
Once onion has reached a soft consistency, add chillies, curry powder, curry leaves, chilli flakes, turmeric and pineapple and stir together well before leaving to cook for approx 5-10 minutes until pineapple is soft.
Step 3
After approx 5-10 minutes, add coconut milk and coconut cream, stir together well and leave for a further 5-10 minutes before serving.
