Ugali and Sukuma Wiki
PREP TIME 10 minutes
COOK TIME 40 minutes
SERVES 4
INGREDIENTS
1 cup maize flour
1 tbsp cooking oil
1 red onion, diced
3 roma tomatoes
2 chillies, chopped
1 bunch coriander, chopped
1 bunch kale, chopped
1 tbsp cooking oil
METHOD
Step 1
Slowly add ½ cup of maize flour into a pot of boiling water and bring back to a boil.
Step 2
Once at a boil, stir together and reduce the heat to medium.
Step 3
Slowly add the rest of the maize flour and continue cooking until the dough pulls away from the pan and becomes very thick.
Step 4
Add oil to a large pan with onions and sauté until translucent.
Step 5
Once onion is translucent, add tomato and sauté for 2 minutes before adding chopped chillies, coriander and kale and sauté for another 2 minutes.
Step 6
After 2 minutes, mix and simmer further for another 2 minutes until tender.
Step 7
After 2 minutes, serve up with warm ugali.
