Snapper Ceviche

SERVES 1
INGREDIENTS
1 red onion, diced
1 cup lime juice
½ yellow capsicum, diced
½ red capsicum, diced
2 cloves garlic, thinly sliced
2 green chillies, thinly sliced
1 fillet snapper, sliced into bite size pieces
½ bunch coriander
Tasman sea salt
Pukara olive oil
METHOD
Step 1
Add lime juice, onion, red and yellow capsicum, garlic and chilli into a bowl and stir together.
Step 2
Add in snapper and stir together for approx 1-2 minutes or until cooked. Then add coriander, a pinch of salt and a drizzle of oil and stir again.
