Scallops

SERVES 4

INGREDIENTS

2 tbsp soy sauce
2 tbsp fish sauce
1 lime, juice
¾ tsp brown sugar
¼ cup garden peas, thinly sliced
3 pea pods, thinly sliced
2 spring onion, thinly sliced
5 sprigs coriander
½ red chilli, diced
8 toasted almonds, chopped
1 drizzle Pukara olive oil
1 handful scallops

METHOD

Step 1
Add soy sauce, fish sauce, lime juice and sugar to a bowl and mix together.

Step 2
Add garden peas, pea pods, spring onion, coriander, chilli, almonds and oil to the dressing and mix together.

Step 3
Plate up with a spoonful of mixture on top of each scallop.
