Potato Fritters
PREP TIME 20 minutes
COOK TIME 5-10 minutes
SERVES 4
INGREDIENTS
3 potatoes, grated
2 tbsp Tasman sea salt
3 shallots, diced
½ bunch mint, chopped
½ bunch basil, chopped
50g feta cheese
3 tbsp Four Roses flour
2 eggs, whisked
1 lemon, cut into wedges
Greek yoghurt
METHOD
Step 1
Grate potatoes and place into a colander with salt before leaving for approx 10-20 minutes until water is drawn out.
Step 2
Once the potato is dried out, place into a bowl with shallots, mint, basil, feta, flour and eggs and mix together well. Then place onto a pan and cook for approx 2-3 minutes on each side until cooked.
Step 3
Once cooked, serve with lemon and greek yoghurt.
