Mussels Poached in White Wine

COOK TIME 15 minutes
SERVES 4-5

INGREDIENTS

30g butter
3 spring onions, sliced
6 cloves garlic
2 red chillies, sliced
1kg mussels, precooked
200ml white wine
½ bunch flat leaf parsley
4 slices crusty bread

METHOD

Step 1
Place butter, spring onions, garlic and chillies into a pot and leave to cook for approx 2-3 minutes until it starts to colour.

Step 2
After approx 2-3 minutes, add white wine and mussels before placing the lid on and leaving to cook for approx 3-4 minutes.

Step 3
After approx 3-4 minutes, serve mussels in a bowl with crusty bread and parsley on top.
