Lamb Kofta

INGREDIENTS
1 clove garlic, diced
800g lamb mince
1 ½ tbsp oregano
1 ½ tbsp ground coriander
1 ½ tsp sumac
3 tbsp coriander stem, thinly sliced
3 tbsp mint, thinly sliced
1 lemon, zest
Tasman sea salt
½ cup greek yoghurt
1 cheek lemon, juice
2 spring onions, sliced
METHOD
Step 1
Place lamb mince in to a bowl with 1 tbsp oregano, 1 tbsp ground coriander, 1 tsp sumac, 2 tbsp mint, 2 tbsp coriander, lemon zest and a large pinch of salt. Mix together well before rolling into balls and placing into a pan until cooked.
Step 2
Place greek yoghurt, 1 tsp oregano, 1 tsp ground coriander, ½ tsp sumac, a pinch of salt, and spring onion into a bowl and mix together before serving with meatballs.
