Fish Tacos

SERVES 4

INGREDIENTS

2 fillets pink ling, sliced into goujons
1 cup Four Roses plain flour
3 eggs, whisked
2 cups breadcrumb mix
1 red capsicum, sliced
1 avocado, sliced
½ bunch coriander, roughly chopped
Old El Paso regular flour tortillas
1 cos lettuce

METHOD

Step 1
Dust pink ling fillets in a bowl of flour before removing and adding to egg wash.

Step 2
Once coated with egg wash, place in a bowl with breadcrumbs until battered before placing into a pot of hot oil and frying for approx 2-3 minutes until cooked.

Step 3
Once fish is cooked, place on tortilla on top of capsicum, avocado, coriander, cucumber and lettuce.
