Hot Pickled Carrots and Fennel

INGREDIENTS
1 cup apple cider vinegar
1 cup sugar
1 small fennel, sliced
1 bunch dutch carrots
2 star anise
1 bay leaf
METHOD
Step 1
In a pot over medium heat add sugar and vinegar, bring to the boil until sugar has dissolved.
Step 2
In a large jar, add fennel, carrots, star anise and a bay leaf. Pour vinegar mixture over fennel and carrots, so the vegetables are covered.
